Pumpkin Roll
3 eggs
1 cup sugar
2/3 cup pumpkin
1 teaspoon lemon juice
3/4 cup flour
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon salt
Filling:
1 1/4 cups powdered sugar
8 ounces cream cheese
4 tablespoons butter
1/2 teaspoon salt
Beat eggs on high speed for 3 minutes. Beat in sugar and pumpkin and lemon juice. Mix flour and spices and fold into pumpkin mixture. Spread into jelly roll pan lined with waxed paper.
Bake at 375 degrees 15-20 minutes. Sprinkle powdered sugar lightly on clean towel. Turn out cake onto towel. Immediately roll and when completely cool unroll and spread on filling and reroll.
Filling: Mix all ingredients together. Spread on roll.
