Rustic Italian Bruschetta

Serving Size: 1
  • 5 tomates, diced
  • 2 red onions, diced
  • 4 Ounces basil, fresh, chopped
  • 8 garlic cloves
  • 2 Cups olive oil
  • 1/2 Cup vinegar, balsimic
  • 1/2 Cup parsley, fresh
  • 4 baguettes
Heat oil and add garlic cloves, whole. Cook until garlic turns golden brown. Remove from heat. Separate garlic from oil. CoolCombine tomatoes and onions, mixing well.Wrap cooled garlic in plastic wrap and crush. Remove from plastic and lightly chop and add to tomato mixture.Pour half of oil and all vinegar and basil into tomato mixture. Fold gently. Season to taste with salt and pepper.Slice bread 1/3 inch thick. Brush remaining oil onto bread. Bake 350 degrees 4-8 minutes, until golden, then sprinkle with fresh parsley.Serve at room temperature.
