- 1/4 Cups flour
- 1 Teaspoon baking soda
- 1/2 Teaspoon salt
- 1 Tablespoon pumpkin pie spice
- 1/4 Cups pumpkin, canned or mashed
- 2/3 Cup brown sugar, packed
- 1/2 Cup apple juice concentrate, thawed
- 1/4 Cup vegetable oil
- 1 Teaspoon vanilla
- 2 x large eggs
- 2 Cups apples, peeled and chopped
STREUSEL TOPPING 1/4 Cup brown sugar, packed 6 Tablespoons flour1/2 Teaspoon cinammon 1/2 stick maragineIn large bowl, stir together flour, soda, salt and pumpkin pie spice. in another bowl whisk together pumpkin, brown sugar, apple juice concentrate, oil, vanilla and eggs. Add liquid ingredients to dry ingredients, stirring just until moistened. Stir in apples. Spoon batter into foil lined muffin cups, filling almost full. Sprinkle streusel topping over batter. Bake on center shelf in preheated 375 degree oven for 25 minutes or until wooden pick inserted in center comes out clean.
