Potato Latkes With Applesauce And Cinnamon Sugar

  • 1/2 Cup sugar
  • 1 Teaspoon cinnamon, ground
  • 1/2 Pounds potatoes,peeled, grated
  • 1 medium onion, grated
  • 1/2 Teaspoons salt
  • 2 large eggs, beaten
  • 2 Tablespoons pepper
  • 1/2 Cup vegetable oil

Combine sugar and cinnamon in small bowl. Set cinnamon sugar aside.Combine potatoes, onion and salt in colander set over large bowl. Let mixture stand 15 minutes, stirring occasionally. Press firmly on solids to remove as much liquid as possible. Discard any accumulated liquid. Transfer potato mixture to large bowl. Mix in eggs, flour and pepper.Position rack in center of oven and preheat to 250 degrees. Line large baking sheet with several layers of paper towels. Heat 1/4 cup oil in heavy large skillet over medium heat. Working in batches, drop potato mixture into hot oil by 2 tablespoonfuls, flattening slightly into 3-inch-diameter cakes. Cook until crisp and golden, about 4 minutes per side. Transfer to prepared baking sheet. Place baking sheet in oven to keep latkes warm. Repeat with remaining potato mixture, adding more oil to skillet as necessary. (Can be prepared 1 hour ahead. keep latkes in warm oven.)Serve potato latkes warm, passing sour cream, applesauce and cinnamon sugar separately.
