- 1 Tablespoon lime juice, fresh
- 1 Tablespoon vinegar, balsamic
- 1/2 Teaspoon Dijon Mustard
- 1/3 Cup buttermilk, low fat
- 1 Tablespoon walnut oil,or olive oil
- 8 Ounces baby greens, mixed
- 1/4 Cup walnut pieces, toasted
- 3 Tablespoons parsley, fresh, chopped
Whisk lime juice, vinegar and mustard in medium bowl to blend. Gradually whisk in buttermilk, then oil. Season to taste with salt and pepper. (Can be prepared 6 hours ahead. Cover and refrigerate.)Combine mixed greens, walnuts and parsley in large bowl. Toss with enough dressing to coat. Season to taste with salt and pepper and serve.
