Apple cinnamon Breakfast Muffins

1 cup flour
1/2 cup whole-wheat flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup buttermilk
1/2 cup honey
2 large eggs
1 teaspoon vanilla
1/4 cup coconut oil, melted
2 cups peeled and chopped Granny Smith apples

Directions:
Preheat oven to 400 degrees. and line muffin tin with muffin cups.
In a medium bowl, whisk together flours, baking powder, salt and cinnamon.
In a large bowl, whisk together buttermilk, honey eggs, vanilla and oil.
Stir int ht edry ingredients into the wet ingredients and mix until just combined.
Gently fold in the apples with a spatula.
Divide the batter evenly in the muffin cups.
Bake for 15 minutes, or until toothpick inserted in the center comes out clean.
Transfer to wire rack to cool.
