Old Fashioned Baked Rice Pudding

1/4 cup long-grain white rice
6 tablespoons sugar
3 1/2 cups milk
1/2 cup heavy cream
1 1/2 teaspoons vanilla

Preheat oven to 325 degrees.  Pour the rice, sugar, milk, and cream into a 3 quart glass baking dish about 3 inches deep.  Stir to dissolve the sugar.  Microwave on high 2 minutes to warm the milk.

Transfer the dish to the preheated oven and bake 1 hour, stirring every 20 minutes.  Cook 45 minutes longer, stirring every 15 minutes.

Stir in the vanilla and cook without stirring 30-40 minutes longer, until the pudding thickens and a light brown skin forms on top.  Let cool to room temperature then refrigerate until chilled before serving.
